Ten (Kind of Obvious) Cooking Tips

Hey guys!

This edition of my usual Wednesday Ten Things post is a list of little cooking tips I wish I had known before I started cooking. Most of these will be fairly obvious to you experienced chefs...but for the newbies who have just started venturing out into virgin chef territory will appreciate this list.

1. When making homemade pizza with a pita or a wrap, toast the wrap BEFORE putting the toppings on. This will make it a little crispier and will hold up to the moisture from the sauce so you don't have pizza soup in the middle of your pie.

2. Buy tomatoes on the vine. This will vastly extend the life of your tomatoes. I have been known to get close to three weeks out of tomatoes that are still attached to the vine (usually sold in bunches of 3 or 4).

3. When freezing bananas, unpeel it and chop it into pieces before you freeze it. Trying to peel a thawed banana is hell and trying to blend an entire frozen banana into a smoothie (unless you have a Vita Mix) is next to impossible. So save yourself the trouble and peel and chop that sucker before freezing it.

4. White flour and wheat flour are NOT the same. You can't sub in wheat flour for the same amount of white flour that a recipe calls for and expect it to come out the same way. It won't. Wheat flour is a lot more dense and will leave your recipe dry and/or flat. Sub out half if you're are looking to make the recipe healthier, or looks for recipes that specifically cater to wheat flour.

5. You don't have to keep buttermilk on hand. This one I just recently learned and is something I definitely wish I had known years ago. To make "homemade" buttermilk for a recipe, simply add a tablespoon of lemon juice or vinegar to a cup of milk and let stand for ten minutes.

6. When making multiple batches of baked goods, don't reuse your cookie sheet or pan right away. Either allow it to fully cool, or run the bottom of the sheet under cold water. Otherwise your delicious creation will cook unevenly or burn on the bottom.

7. Household items that can double as kitchen appliances: Wine or liquor bottles make good rolling pins. I didn't have a rolling pin for the longest time (I do now, I'm more classy than I was I guess) but most everyone has a bottle of wine or liquor on hand. It also helps to take a few nips from the bottle when baking. It makes the whole experience more enjoyable. Also, hammers make good meat tenderizers. You work with what you've got.

8. When reheating grains like rice or pasta, add a little water to keep it moist and fresh like you just cooked it. You can also use a little broth if you are looking to add a little flavor.


9. Remove the seeds from tomatoes when making dips or using as a pizza topping. The seeds will make your dip watery and your pizza soggy. Removing the seeds and just chopping up the "shell" of the tomato will yield much better results without sacrificing the taste you're going for.

10. Freeze extra broth in an ice cube tray. I don't know about you, but I almost never use a whole box of broth, I always have a little bit leftover. Rather than throw it away, freezing it in ice cube trays allows you to just take out what you use and save the rest without having to buy a new box for every recipe. Just make sure you use seperate trays for your regular ice and your broth...you don't want beef flavored water.

Lolita

Hi friends!

Last Friday night the boy and I tried out a new restaurant that I had heard great things about in Boston, Lolita. It is a Mexican restaurant on Dartmouth Street that seems to be all the rage right now. I had heard nothing but good things so I know I definitely wanted to try it. I apologize for the pictures beforehand, the restaurant is really dark and I didn't want to be obnoxious with my flash.

















There are two dinner areas on either side of a rather large bar area. It is dimly lit with red light and the atmosphere is very intimate and slightly vampire-esque.

They start out by bringing you a grapefruit Italian Ice kept cold and steaming with dry ice. You have the option to have tequila added, which we of course opted for (who is going to turn down free booze?). The grapefruit and tequila together are exquisite, I highly recommend getting the tequila.

















For our drinks, we both chose the Diablo Margarita. The Diablo Margartia is lunazul reposado, luxardo triplum, serrano chile, blood orange, pineapple, and strawberry. The drink itself was quite good, but they rim the glass with a mix of sugar and black pepper. The black pepper actually completely ruins the drink. It's an unpleasant combination, and unfortunately some of the pepper inevitably drops into the glass, thus ruining the whole drink. If you order this drink, ask for only sugar on the rim and you will not be disappointed. 

















With our drinks they brought out warm tortilla chips with a choice of four dipping sauces. The first was a salsa verde, the second was a queso dip, the third was a roasted red pepper salsa, and the fourth was a very spicy mango salsa. The salsa verde was exactly how you would expect it to be, possibly out of a jar. The roasted red pepper salsa was just ok, really nothing special. Had it been warm, that might have improved it marginally. The queso dip was delicious. It had a great smoky flavor that definitely put the other salsas to shame. The fourth one I did not try because supposedly it is very spicy, and I'm just a mild spicy kind of girl. The boy confirmed that it was really spicy and the flavor was odd to him.

































For my entree, I ordered the Garlic Lime Chicken with matchstick potatoes and roasted corn. The chicken was very juicy and cooked just the way I like it...a little charred. However, the garlic sauce was used sparingly and didn't have the strong garlic flavor I was expecting. The roasted corn was actually only about 2 tablespoons full. The matchstick potatoes were good, but reminded me of the French's potato sticks I ate as a kid.

















I didn't get a picture of the boy's entree, but he ordered the Ancho Chile Chicken Quesadilla. They actually looked like enchiladas and the boy did not like his dish at all. He said that the bacon was what prompted him to order it and he couldn't taste the bacon. He ended up stealing some of my chicken and matchstick potatoes.

For dessert we ordered the Bananarama, which is a fried banana cheesecake. While it looked absolutely amazing, it was cold on the inside when I was expecting it to be warm. The outside was crunchy and delicious but I was not blown away by the dish like I had expected to be.

















Ordering dessert is almost unecessary because they bring you green apple cotton candy with pop rocks at the end of your meal. I had a few bites, but the majority of the cotton candy was finished by the boy. Yes, I said finished. He ate the entire thing of cotton candy after eating most of the chips, finishing his dish, half of mine, and half of dessert. He's a pig.

















With the cotton candy they also bring temporary tattoos. That is the boy's arm, not mine. Don't want you guys thinking I have hairy upper arms.

















All in all it was a pleasant experience. It's really the extras that make this restaurant special, because the food itself is really only so-so. I'm glad that I was able to go and try it out, but I wouldn't go again for dinner, maybe just drinks and cotton candy.

Turkey Chili

Howdy! Today I want to share with you one of my favorite recipes. I make this dish a LOT because it freezes really well and is better the older it is. It also makes a large amount for leftovers. I typically make this on a sunday and freeze it in individual containers for an easy grab and go lunch.

Ingredients:

1 green pepper
1 yellow onion
2 zucchinis
3 14 oz cans of diced tomatoes with green chilis
1 14 oz can of pinto beans
1 14 oz can of kidney beans (light or dark)
1 tbsp unsweetened cocoa
1 tbsp light brown sugar
chili powder to taste
1 tbsp garlic
1 tbsp cumin
1 lb ground turkey

















Chop up the onion, pepper, and zucchini.

















Brown the turkey in a large wok. I use a wok because I find it's the best for cooking chili quickly. Using a large pot takes a little bit longer, so if you only have that and not a wok, add about a half hour to your simmer time at the end.

















Once the turkey is cooked, add in the veggies and spices and stir. I like my chili spicy so I add a ton of chili powder, but customize it to your particular taste.

































After a few minutes, once the veggies have begun to tender a little, add the diced tomatoes.

















Drain and rinse the beans.

















Add to the pot.


















Mix the ingredients well, turning the heat down to medium low. Let simmer for at least 45 minutes, an hour and fifteen if you are using a large pot.

Makes about 6 servings...or 4 if you are really hungry!

Snow Be Gone

Friday I missed you SO MUCH.

I don't know about anyone else who lives in an area that got pounded by the snow on Wednesday, but my commute into work in Boston yesterday was HELL. The snow clean up was atrocious and to be honest, the whole city could have used another day off to get it's act together.

A 20 minute bus ride took 90 minutes yesterday due to lanes being full of snow and accidents because of the still slippery roads.

Getting off the bus on Federal Street, I was greeted by several of these lovely signs:
















Caution: Falling Ice. That's not a lawsuit waiting to happen or anything.

To add to my already grumpy attitude about being on the bus for 90 minutes (with NO SNACKS, the horror), I left my favorite pair of gloves on the bus. Sad.

To cheer myself up after an irritating day, I asked my friend Kristen to dinner at my favorite mexican restaurant, Margarita's in Waltham.

















I love this place. This is the best location of this chain due to the outdoor patio on the Charles. It's a gorgeous place to spend a summer evening (I know it's not summer, I'm just dreaming of it), looking out at the water and sipping on some maragaritas. Last night I ditched my old standby of the Chicken Chimichanga for the healthier (but not by much) taco salad with pulled chicken. I had just the guts and only a few bites of the shell before I called it quits.

















I have hot weekend plans you guys...first up, a dinner date with the hottest guy in town (to me anyway) at Lolita in Boston. After reading a few reviews, I knew I had to try it. I will have the full review for you guys next week. Saturday evening I have my very first ever blogger meet up, which I am super excited about. Then Sunday it's the playoffs (not that I really care about football, but I do care about wings). I will be heading to a bar with my friend Meg to (pretend to) watch the game.

Snow Day!

Hey hey.

I hope everyone has managed to shovel themselves out this morning. I know I had a hell of a time yesterday. Luckily my upstairs neighbor plows our driveway so I'm lucky in that respect, but a plow can only do so much and get so close to my car, so it took a good chunk of time trying to get the very heavy snow away from my tires enough to get the car out.

These were the scenes out my front door yesterday morning when I finally got out of bed at 10am. What good is a snow day if you can't sleep in???

































































When all was said and done we got about 16-18 inches of snow. After finally getting my car out and taking a nice long hot shower to get the cold out of my bones, it was time for lunch!

Lunch was the lunch of champions. An egg and cheese sandwich on a whole wheat english muffins with a side of sauteed brussel sprouts.

















Dinner was pork tenderloin from Trader Joe's. The pork comes preseasoned, all that has to be done is to sear it and bake it in the oven for 20 minutes at 350.

















I know I've said this before, but it bears repeating...Trader Joe's is literally the best store on earth. They make a ton of convenience foods that make my life a thousand times easier. On the side of this delicious pork tenderloin, I made smashed red potatoes (with butter and cream because I was feeling a little naughty, wink wink) and steamed up some broccoli and cauliflower for both of us.

















A quick simple easy meal. I actually felt a bit guilty because I had all day to whip up a gourmet culinary masterpiece since I was off, but the laziness won out and I spent the day on the couch catching up on my DVR and cuddling with this girl.

I'm Jealous...

...of the bloggers who can just look in their pantry and a recipe appears in their minds. I find a recipe I want to adapt/try and I have to go buy the ingredients to make it. I can never just wing it in the kitchen.

...of women who are tall enough to be able to wear flats. Heels are a must if I don't want to feel like a midget. It's bad enough that I almost need a step stool just to get into bed.

...of people who like fish, because I know it's good for you, but I really just can't eat it.

...of dog owners. I have been dying to get a dog for the longest time. The boy and I are finally moving at the end of the summer to a place that allows dogs and I can't wait to get one.

...of the bloggers who have stand mixers while I am busy mixing things with a hand mixer. At least I'm building up my wrist strength. It's almost a workout.

...of food critics. Can you say dream job? I mean, you get paid to EAT. Swoon.

...of people who can do real pushups, not just the girly ones. I have the upper body strength of a 5 year old girl.

...of the bloggers who have a Vita Mix while I kill a $40 blender every three months.

...of fast runners. I will probably be a 10 minute mile girl forever. At least over long distances.

...people who live in climates where it never snows. Because it snows a lot in Boston and it sucks. But at least I have a snow day today because of it...which I will have to spend shoveling out my car. I would rather be at work.

First up, my seven facts!

1. I hate mushrooms. If they are cut up small enough and drowned in sauce, I can eat them, but otherwise, they gross me out.

















2. Washington DC is my favorite place on Earth. I am going from Feb. 7th through the 17th for work and I am so excited I can barely stand it!



















3. I worked at Dunkin Donuts in high school. To this day, I cannot eat filled donuts or anything glazed. Don't ask, you don't want to know.

4. As far as desserts go, I would pick anything fruit based over anything chocolate any day. Fruit cobblers, pies, etc. definitely appeal to me more than chocolate cake.

























5. I didn't get my drivers license until I was 23 years old. Yep, I was a late bloomer. Basically, my parents refused to teach me how to drive, so it was the fuzz who eventually taught me how to drive and led me to get my license. I still am driving my first car too.
















6. I was born on the 4th of July and when I was little I thought the parade and the fireworks were for me. I still say there is no better day to have your birthday (although New Years Eve and St. Patrick's Day are pretty cool birthdays too). Hooray for us holiday babies!

7. I subscribe to about 20 different magazines. Yes, I am a crazy magazine lady. I usually read them within a few days of getting them, rip out anything I want to keep and then throw them away. I love getting magazines, but I hate having them around the house.
