Snow Day!

Hey hey.

I hope everyone has managed to shovel themselves out this morning. I know I had a hell of a time yesterday. Luckily my upstairs neighbor plows our driveway so I'm lucky in that respect, but a plow can only do so much and get so close to my car, so it took a good chunk of time trying to get the very heavy snow away from my tires enough to get the car out.

These were the scenes out my front door yesterday morning when I finally got out of bed at 10am. What good is a snow day if you can't sleep in???

When all was said and done we got about 16-18 inches of snow. After finally getting my car out and taking a nice long hot shower to get the cold out of my bones, it was time for lunch!

Lunch was the lunch of champions. An egg and cheese sandwich on a whole wheat english muffins with a side of sauteed brussel sprouts.

Dinner was pork tenderloin from Trader Joe's. The pork comes preseasoned, all that has to be done is to sear it and bake it in the oven for 20 minutes at 350.

I know I've said this before, but it bears repeating...Trader Joe's is literally the best store on earth. They make a ton of convenience foods that make my life a thousand times easier. On the side of this delicious pork tenderloin, I made smashed red potatoes (with butter and cream because I was feeling a little naughty, wink wink) and steamed up some broccoli and cauliflower for both of us.

A quick simple easy meal. I actually felt a bit guilty because I had all day to whip up a gourmet culinary masterpiece since I was off, but the laziness won out and I spent the day on the couch catching up on my DVR and cuddling with this girl.

How much snow did you get? Did you have a snow day?

  1. Sooo much snow!! You should see the snow banks in Boston - ridiculous. Also - looove Trader Joe's, and those brussels look delicious.

  2. No snow days for us!! I live where we don't get much snow but what we get they do a terrible job of clearing the roads! Where I grew up though? TONS of snow and they were much more prepared for it haha

  3. I love snow days!! I was so excited to wake up and see all the snow we got. And everything was so pretty all covered in snow. I did have big goals about baking and cooking a nice dinner, but I ended up going your route -- quick and easy. Turns out, just because I had all the extra time, it didn't actually make me FEEL like cooking with it, haha

  4. The food in this post is really speaking to me. I made a similar breakfast sandwich yesterday - and how good would it have been if I had added brussels? next time. I also love TJ's marinated pork. It's makes for an insanely easy dinner!

  6. I think we got about 5 inches in Charlotte at the beginning of the week. Nothing like what you guys got hit with, but in the south it's pretty crippling as they have no idea how to deal with it. I need to try making a pork tenderloin! Sidenote- is your washing machine your 'food photo taking spot'? LOL :)

  7. @ Brittney LOL, yes, I love taking pictures on top of my dryer because the lighting happens to be really good there and also because it's usually the only unoccupied space in the kitchen (I don't have a lot of counter space and if I've cooked that day, I don't have any)

  9. I took a snow day (aka hang over day) earlier this week so used up my boss' patience for the month. Rochester did not get it as bad as everywhere else surprisingly.

Thanks for poppin' my comment cherry by the way!

  12. We didn't get any new snow recently, but then again I'm on the opposite coast of you.

I wish there was a Trader Joe's where I lived!

  13. Hi Stephanie. I found you through Meghan's blog. Your comment struck a chord so I thought I'd head on over here and say hi. I've found the exact same thing that my friends don't read my blog and much and they really don't understand what it would mean if they did. And same with you, my boyfriend is possibly my biggest supporter. His family too, which is adorable. Whenever we're at family gatherings, his dad brings it up and goes on about it. It's sweet and it means a lot.
Glad I found your blog. Do you live near Waltham? I noticed a lot of Waltham restaurants on here. I went to Brandeis so they're my old stomping grounds.

  14. We got a disappointing amount of snow - enough to be annoying (and super dirty on the streets of NYC) but not quite in the 'work from home' territory. Bummer. Your photos are gorgeous!

  16. I love Trader Joe's too! We just got one in SC back in October and I go every week!
If as much snow fell here in SC as you got in Boston we'd be shut down for a month! (As it is we were shut down for nearly 4 days this time around. :D)
