The Magical Fruit

Hello everyone! I'm Susan and I have a blog over at Oliepants where I rant about my life, my recipes, my thoughts, and my ongoing goal to a healthier lifestyle. I am super excited to guest post for Stephanie as I love her blog and read it daily!

Today, I wanted to offer you a peek into one of my favorite beans - The Black.

This past week, I really did prove to myself that my obsession can be easily enjoyed at breakfast, lunch and dinner. My absolute favorite thing to do with black beans is to make my super easy black bean dip aka The Dip.

Heat up 1 (16 oz) can of black beans, 1/2 cup of salsa (your choice), 1/2 tsp cumin, and 1/2 tsp salt over medium-low heat. Simmer the contents for about 25 minutes, stirring occasionally. You could add cheese if you wanted to the mix. Afterward, you get a delicious and thick dip/spread of black-bean-goodness!

After you eat this, you will know instantly that you want it for lunch. Well, I did.

  3. Black beans HANDS DOWN. Love them. Last night I had some leftovers of a big pot I made, and I pureed them with a can of tomatoes and some cumin to make black bean soup. SO simple, but totally delicious. I also love them in quesadillas, enchiladas, on sweet potatoes.. you name it.

  7. Definitely a pinto girl, but I love all beans! I mean, god bless the chickpea. It brings us hummus AND falafel- what a bean!
